Chicken Vegetable Weight Loss Soup

I am siting here eating this as I write. It is delicious.

To get started I took a 3 1/2 half quart pan, filed it with hot water and put it 5 big chicken thighs. Part of the idea is to yield some extra cooked chicken for other stuff.

And then start spicing it up. I added abut half an onion chopped up and a big handful of fresh basil to get started. I ground in some pepper, a little garlic salt, and some lemon pepper.

Then I put in a whole pack of Alfredo Sauce Mix. Maybe you think that item is a little weird but it works, and it works well. Just the power mix has no fat.

So I let it all cook at medium low for a good hour. You could run it maybe a little longer.
Cook the chicken until it falls off the bone. It is then very easy to separate the meat from the bone, use fork and fingers (let it cool off, OK?) Set the bigger pieces aside for sandwiches or salads and take all the smaller pieces and put them back in the pot still simmering.

What Vegetables do you have that look good today? I added some Asparagus, Italian squash, cauliflower and broccoli. enough to make a big bowl of this a meal.
